I've never been a fan of cold pasta salads, but the other day, I ordered a macaroni salad for lunch and liked it so much it inspired me to try to make some myself.
After looking in all of my cookbooks and not finding exactly what I wanted, I turned to my good friend Google, and found a recipe called Classic Macaroni Salad, which sounded good to me.
I tried it and liked it so much I'd like to share it today.
Ingredients: 4 Cups Uncooked Elbow Macaroni** Directions: Bring a large pot of lightly salted water to a boil. Add the macaroni and cook until tender, about 8 minutes. Rinse under cold water and drain. In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight. **This makes a lot, so you may want to cut the recipe in half. |
